An Israeli food tech startup is preparing to launch a “hybrid meat” revolution in Tel Aviv restaurants next month. Mush Foods, a startup that was founded last year, leverages food waste to grow an edible mushroom known as mycelium. The company grows 14 mycelium species that can be blended with a wide variety of animal proteins, including beef, chicken, fish, pork and seafood.
