Ingredients:
~1.5lb Chuck Roast
1 large onion, small dice (2-3 smaller onions)
2-3 medium carrots, peeled and grated
6-8 large garlic cloves, crushed or diced fine
28 oz can good tomatoes (crushed, whole peeled, doesn't matter)
3 oz tomato paste (1/2 6 oz can, two tbsp, doesn't matter)
1 lb papperdale pasta
2 cups red wine
2 bay leaves
4-6 sprigs thyme
1-2 sprigs rosemary
(rosemary and thyme tied together in bouquet garni)
red pepper flake to taste
parmesan reggiano to taste
parsley for garnish
Olive Oil
Salt
*********I MENTIONED COOKING IN OVEN FOR 2 HOURS COVERED AND ONE HOUR UNCOVERED, THAT WAS NOT NEEDED. 2 HOURS COVERED AT 300 WAS ENOUGH TIME TO GET CHUCK ROAST TO TEMPERATURE CAPABLE OF BEING PULLED**************** SO DO THAT.
