Blackening is a time-honored technique, perfected by Paul Prudhomme, who used it extensively at his restaurant in New Orleans K Paul. It involves coating the protein of your choice ( Tuna steak in my example) and searing it on a hot cast iron griddle or pan. I use Blackened Redfish Magic, but almost any cajun seasoning will work. My pan was hot, 500+ degrees but not STUPID hot. Turned out good anyway.
