Update!
This design proved to be impractical due issues with the drive train. The alternator motor has little torque so needs some kind of gearbox. For this reason I shelved this project and moved on to a hub motor and I DO NOT recommend you follow this build unless you have access to a suitable gearbox.

The motor is finally on the bike, sort of. It needs a lot more work but is finally going the right way.

Controller
This is a similar controller to the one I used though as sellers constantly change products over time I cannot guarantee it will work with an alternator. My experience is the cheapest controllers will work and the more expensive ones will not.

If you are looking for 18650 cells to build a battery pack here is where I buy mine. I have always used LiitoKala cells and found them to be good quality.
Note the Name brand cells are copies, they are NOT genuine but do have similar properties to the original and are still excellent batteries.
