How to Make Burnt Rice Ice Cream | Rice Coffee | Tinutong na Bigas - [ASMR Cooking Sounds]

Burnt rice is used to make rice coffee or "kapeng bigas" in the mountainous regions of the Philippines. - Isn't that interesting and resourceful?
I first tried this in 2019 and it instantly became my favorite ice cream flavor, it's like a cross between black sesame and coffee but with an extra roasted flavor. I've been craving it for a long time and decided to make a recipe video to share this unique flavor with all of you!
Ingredients:
(Makes 1 pint)
2 egg yolks
54g sugar
50g skim milk powder
3/4 cup milk
250ml cream
22g grinded burnt rice
Instructions:
1. Toast rice on low to medium low heat for 5 minutes. Allow to cool and grind with a mortar and pestle until it resembles freshly ground pepper.
2. Whisk together egg yolks, sugar and skim milk powder.
3. Simmer milk and cream
4. Temper the egg yolk mixture with the hot milk and cream. Strain the mixture back to the sauce pan
5. Heat the mixture on low heat until it thickens and starts to look like melted ice cream. Cool til room temperature.
6. Put the mixture in an ice cream machine and churn.
7. Put the ice cream into a container and freeze for a minimum of four hours.
Note:
Skim milk powder is not the same as powdered milk for drinking like Bear Brand and the like. You may opt to use them but the sugar will have to taken into account and you must adjust accordingly.

Hindi parehas and skim milk powder at powdered milk na pang-inom tulad ng Bear Brand o Alaska . Pwede gamitin ang powdered milk pero kailangan alalahanin and asukal na maroon sa powdered milk, kailangan bawasan ang asukal na ihahalo ice cream mixture.
