At Gage & Tollner, one of the oldest restaurants in Brooklyn, New York, lives a legacy that starts with the menu inspired by one developed decades ago by chef Edna Lewis. Lewis, who had no formal training but climbed to ranks of the restaurant in her 70s, is the granddaughter of Chester Lewis, a formerly enslaved man who went on to help build the city of Freetown.
