Tofu 'bacon': baked for 15 mins at 180 degrees celsius, fan-forced
150g firm tofu
1 tbsp olive oil
1/8 cup soy sauce
2 heaped tbsp bbq sauce
2 tsp sriracha
1/2 tsp liquid smoke
To serve:
sourdough
tomato
lettuce
avocado
vegan mayo
03:09 - Buffalo tofu bites
Bake tofu bites at 190 degrees celsius in the air-fryer
For 15 minutes round one
For 10 minutes round two
500g firm tofu
2 tsp vegan chicken stock powder
2 cups boiling water (or enough to cover tofu)
Bulk breadcrumb mixture:
1 cup panko breadcrumbs
1/3 cup nutritional yeast
1/3 cup plain flour
1 tsp veggie stock powder
2 tsp garlic powder
drizzle of oil, for frying
Buffalo sauce:
1 cup sriracha (can sub buffalo sauce)
1/3 cup vegan butter, melted
To serve:
vegan mayo
fresh parsley
06:27 - Creamy pasta with crumbled tofu
Crumbled tofu: baked at 190 degrees celsius, fan-forced for 20 minutes
250g firm tofu
1 tbsp olive oil
1/8 cup soy sauce
2 tbsp bbq sauce
1/2 tsp liquid smoke
Creamy pasta:
1 tbsp vegan butter
1/2 brown onion, sliced
2 garlic cloves, crushed
1 cup plant-based cream
2 tbsp nutritional yeast
1 tsp veggie stock powder
To serve:
200g pasta, cooked al dente
fresh parsley
08:15 - Crispy tofu burger
Tofu:
100g firm tofu
1 tsp vegan chicken stock powder
1 tbsp white miso paste
1 cup boiling water
Bulk breadcrumb mixture:
1 cup panko breadcrumbs
1/3 cup nutritional yeast
1/3 cup plain flour
1 tsp veggie stock powder
2 tsp garlic powder
oil, for frying
Lemon dill mayo:
1/4 cup vegan mayo
juice of 1 small lemon
small handful fresh dill
To serve:
burger bun
sliced cucumber
cos lettuce

300g firm tofu
2 tsp corn flour
2 tsp vegan chicken stock powder
1 tbsp oil, for frying
Sticky orange sauce:
zest of 1 orange
juice of 1 orange
1/8 cup soy sauce
1/8 cup rice wine vinegar
1 tsp sesame oil
1 tsp maple syrup
To serve:
rice
blanched greens
dried shallots
sesame seeds
12:11 - Chocolate mousse
300g silken tofu
140g soy or oat yoghurt
1 tbsp maple syrup
1 tbsp cocoa powder
1 tsp vanilla
pinch of salt
125g dark chocolate, melted
Set in the fridge for a minimum of 3 hours
13:23 - Tofu scramble
1 tbsp vegan butter
1/2 brown onion, diced
2 garlic cloves, finely chopped
150g firm tofu
75g silken tofu
1/2 cup soy milk
1 tsp veggie stock powder
1 tbsp nutritional yeast
1 tsp dijon mustard
optional: 1/4 tsp turmeric
optional: 1/4 tsp black salt
14:41 - Spinach & ricotta cannelloni
Baked for 20 mins at 180 degrees celsius, fan-forced
Tomato sauce:
1 tbsp olive oil
1/2 brown onion, diced
2 tsp dried italian herbs
2 tsp garlic powder
1 tbsp tomato paste
400g tinned crushed tomatoes
1/2 cup water
1 cup passata
2 tsp veggie stock powder
2 tsp raw sugar
Tofu ricotta:
1 tbsp olive oil
1/4 brown onion, diced
1 cup frozen spinach
400g firm tofu
1 cup raw cashews
1/2 cup water + more if needed
1 tsp veggie stock powder
1 tbsp nutritional yeast
1 tsp garlic powder
1 tsp white miso paste
1 tsp dijon mustard
The rest:
250g cannelloni tubes
vegan cheese, grated
fresh parsley, to serve
17:20 - Peanut tofu skewers
500g firm tofu
2 tsp corn flour
2 tsp veggie stock powder
2 tbsp oil, for frying
1/2 cup smooth peanut butter
1/8 cup soy sauce
2 tbsp rice wine vinegar
1 tsp sesame oil
1 tsp garlic power
2 tbsp water + more if needed
To serve:
spring onions
chilli
sesame seeds
18:56 - Shredded tofu sandwich
Shredded tofu:
100g firm tofu
1/4 red onion, finely diced
small handful fresh dill
2 heaped tbsp vegan mayo
1 tsp dijon mustard
1 tbsp water
