MALT LOAF RECIPE.
INGREDIENTS:
150 MLS HOT BLACK TEA
85 GMS DARK BROWN SUGAR
300 GMS MIXED DRIED FRUIT
2 EGGS BEATEN
250 GMS PLAIN FLOUR
1 TSP BAKING POWDER
1/2 TSP BICARBONATE OF SODA
175 MLS MALT EXTRACT
METHOD:
POUR THE HOT TEA INTO A MIXING BOWL WITH THE FRUIT AND LET SIT OVERNIGHT.
ADD THE MALT, SUGAR, EGGS, AND STIR WELL.
ADD THE SIFTED FLOUR, BAKING POWDER & BICARB ANDIX TILL COMBINED.
POUR INTO THE PREPARED TIN.
BAKE UNTIL FIRM AND WELL RISEN. APPROX 60-90 MINS. MY CAKE TOOK 90 MINUTES. TEST AFTER 60 MINUTES, IF A SKEWER COMES OUT CLEAN, ITS DONE, IF NOT TEST APPROX EVERY 5 MINUTES.
BAKE IN A PREHEATED OVEN AT 150 DEGREES CENTIGRADE IF FAN ASSISTED, OR 170 DEGREES CENTIGRADE IF NOT.
WHILST STILL WARM, BRUSH THE TOPS WITH MORE MALT EXTRACT.
WHEN COOLED, REMOVE FROM THE TINS, WRAP IN PARCHMENT PAPER OR PLACE IN A CAKE TIN.
LOAVES BECOME MORE STICKY AFTER KEEPING FOR A COUPLE OF DAYS.
