this is a cheesecake recipe
INGREDIENTS
A) Crust
All-purpose flour – ¾ cup (90g)
Icing sugar – ¼ cup (30g)
Salt – ⅛ tsp
Baking powder – ¼ tsp
Cold butter – ¼ cup / 4 tbsp / 56g
Egg – ½ egg (beat 1 egg, use half)
Vanilla – ¼ tsp
Lemon zest – from ¼ lemon
B) Ricotta Cheesecake Batter (Half)
Eggs – 1 + ½ eggs
(beat 2 eggs and use 1½ OR use 1 whole egg + half of another)
Icing sugar – ⅜ cup (~45g)
2. Cheesecake batter
1. Beat ricotta + mascarpone.
2. Add sugar.
3. Add eggs slowly.
4. Add zest, juice, flour, cinnamon, and vanilla.
5. Mix gently.
Salt – ⅛ tsp
Ricotta cheese – 425g
Mascarpone – ½ cup (~110–120g)
Lemon zest – ½ lemon
Orange zest – ½ orange
Orange juice – 1 tbsp
Flour – 1 tbsp
Vanilla – ½ tsp
⭐ METHOD (same as full recipe)
1. Crust
1. Mix dry ingredients.
2. Add cold butter → crumble.
3. Add egg (half), vanilla, zest → mix to dough.
4. Chill for 15–20 minutes.
5. Press into a 6-inch springform pan.
6. Pre-bake 170°C for 8 min.
3. Bake
Temperature: 150–155°C
Time: 40–55 minutes
Center should jiggle slightly.
Chill at least 6 hours.
