Sheep were first domesticated in Mesopotamia some 10 000 years ago and sheep farming was gradually adopted worldwide. Lamb has been considered a choice dish throughout history and, in some religions, carries symbolic value. Sheep adapt to all kinds of climates and only need grass to eat. Currently, Australia and New Zealand are the world’s leading producers and exporters of ovine meat.
