By boiling the potatoes with baking soda, their surfaces become starchy and rough, creating the ultimate crisp texture during roasting. Tossed in hot oil and seasoned to perfection, they are then roasted to a beautiful golden brown, with optional garlic and rosemary for added flavour. These potatoes are the ultimate crowd-pleaser and a must-have side dish for any roast dinner!

Ingredients:
1.5 kg (3.3 lbs) starchy potatoes (e.g., Russet or Maris Piper)
1/2 tsp baking soda
3–4 tbsp vegetable oil (or goose fat/duck fat for extra flavour)
2–3 sprigs fresh rosemary (optional)
3–4 cloves garlic, smashed (optional)
Salt, to taste
Freshly ground black pepper, to taste

Preheat your oven to 220°C (425°F)
Roast for 30 minutes.
Flip and roast for another 20–30 minutes or until the potatoes are golden brown and crispy all over.
