Fried chilled leftover polenta is traditionally pretty sticky, and this is an interesting test because you also want a nice browned crust, which is somewhat of a challenge on a nonstick pan. Previously my choice would be hard ceramic, but this turned out great with pretty much perfect release. I have no complaints about this. It does splatter a fair amount, I would take a large saute pan made out of this in a heartbeat.
