The ingredients are straightforward: maize flour, water, salt, fenugreek, and a sourdough starter, which not only makes it delicious but also a cultural treasure. ❇️ Aish Merahrah
Ingredients:
2/3 cup active sourdough starter
1½ cups lukewarm water
2 to 3 cups unbleached all-purpose flour
1½ cups maize flour
1 tablespoon honey
½ teaspoon ground fenugreek seeds
1 teaspoon salt
Instructions:
1. In a mixing bowl, combine the lukewarm water with the sourdough starter.
2. Stir in all the remaining ingredients until well combined.
3. Knead the dough for about 3 to 5 minutes, adding more flour only if necessary.
4. Place the dough in a lightly oiled bowl, cover it, and let it rest for one hour.
5. After the resting period, perform stretch and folds every 30 minutes for a total of four times.
6. Transfer the dough to the refrigerator to ferment overnight.
7. The next day, divide the dough into 6 to 10 pieces and let them rest on the counter for 20 minutes.
8. Using a rolling pin, roll out each piece into a round shape, adjusting the thickness to your preference.
9. Place the dough rounds onto a hot baking sheet or pizza stone and bake at 450°F (230°C) until golden brown.
