Avarekaalu Saaru is an aromatic sambhar made with hyacinth beans / field beans and freshly ground spices. Served with steamed rice or millet dumplings (mudde)
2 cups Fresh Avarekaayi (deseeded from the pod)
1 tsp Salt (or to taste)
¼ tsp Turmeric
Masala to grind:
2 TBSP Coriander seeds
3 Kashmiri Red chillies
2 Red Chillies (Spicy variety)
½ TBSP Jeera / Cumin
¼ cup Freshly grated coconut
¼ tsp Methi / fenugreek seeds
1 tsp Green coriander
1 tsp Raw rice
1 TBSP Channa dal / Bengal Gram
Tempering:
1 TBSP Ghee (sub with oil for a vegan version)
1 tsp Mustard seeds
1 sprig Curry leaves - few
1/4 tsp Asafoetida(a generous pinch, skip for GF)
