Ingredients for chicken liver parfait (approx. 1 kg / 2.2 lbs):
✔️ 400 g (14 oz) chicken liver, soaked in milk
✔️ 200 g (7 oz) unsalted butter
✔️ 60 g (2.1 oz) shallots
✔️ 5 eggs
✔️ 50 ml (1.7 fl oz) cognac
✔️ 100 ml (3.4 fl oz) Porto wine and/or Madeira wine
✔️ 200 ml (6.8 fl oz) heavy cream (30% fat or more)
✔️ salt — 13 g (0.45 oz) per 1 kg (2.2 lbs) of mixture
✔️ black pepper — 1–2 g (0.04–0.07 oz) per 1 kg of mixture
✔️ bay leaves — for decoration
