Ingredients for Duck Magret with Sarladaise Potatoes and Pepper Sauce (4 portions):
✔️ 2 fatty duck breasts (350–400 g / 12–14 oz each)
✔️ 2 shallots
✔️ 2 cloves of garlic
✔️ 800 g (28 oz) potatoes
✔️ 1 handful of parsley
✔️ 1 tablespoon black peppercorns
✔️ 10 ml (0.3 fl oz) cognac or any brandy
✔️ 40 ml (1.35 fl oz) dry white wine
✔️ 250 ml (8.5 fl oz) concentrated chicken stock
✔️ 20 g (0.7 oz) butter
✔️ Salt to taste
