This Cold Noodle Salad is perfect for those hot summer nights where you don't feel like cooking, but want a quick meal that's fresh and satisfying :)

INGREDIENTS
1/4 package, Dry Rice Vermicelli
1/2 package, Extra Firm Tofu diced
1 tbsp, Canola Oil
1/4 Cucumber, julienned
1 Carrot, julienned
1 cup Sugar Snap Peas, sliced in half
1 Red Pepper, julienned
1/4 cup, chopped Roasted Cashews
2 Green Onions, thinly sliced
1/2 cup, chopped Coriander
2 tbsp, Soy Sauce
1/2 tbsp, Mirin
3/4 Lime, juiced
1 tbsp, Rice Wine Vinegar
1/2 tbsp, Sesame Oil
1 pinch, Red Chili Flakes
METHOD
Submerge Vermicelli in a bowl of hot water. Allow to stand for 15 minutes, drain, and then rinse under cold water. Set aside.
In a frying pan, heat oil on medium high. When hot, add Tofu and fry until golden on all sides.
For Dressing, combine Soy Sauce, Mirin, Lime Juice, Rice Wine Vinegar, Sesame Oil, and Chili Flakes. Stir to combine.
In a large bowl, toss together noodles, tofu, all vegetables, cashews, coriander, green onions, and dressing until well combined.
Serve immediately, or pack away for a great lunch the next day. Enjoy friends! :)
