Fluffy, sweet, and filled with tender, slightly tart apple pieces — these Berliner Apfelpfannkuchen are a cozy classic from the German kitchen, and one of my personal favorites. Perfect for breakfast, dessert, or an afternoon treat.
Ingredients:
400 g (about 3 1/4 cups) all-purpose flour
500 ml (about 2 cups) whole milk
30 g (about 2 tablespoons) melted butter
4 eggs, separated
100 g (about 1/2 cup) sugar, plus 2 tbsp for egg whites
1 packet vanilla sugar (or about 2 teaspoons vanilla extract)
1 pinch of salt
3–4 apples, peeled and diced
Oil for cooking
Yield: About 12-14 medium pancakes (serves 3-4 people)
Directions:
Separate eggs. Whisk yolks with sugar and vanilla. Gradually mix in flour and frothed milk until smooth. Beat egg whites with salt and sugar and fold gently into batter. Arrange apple slices while cooking on a lightly oiled pan over medium heat. Serve warm with powdered sugar or applesauce.
