📌 RECIPE CARD
FRIDAY
AATISHI CHICKEN PLATTER
Ingredients
Chicken 1 whole with skin (Open up from center)
Marinate with
Ginger garlic 2 tbsp
Salt n pepper 1 tsp each
Sar cream ½ cup
Kashmiri Red pepper grounded 2 tbsp
Lemon juice 2 tbsp
Parsley 1 tbsp
Button red chili pastes 2 tbsp
Tahini 1 tbsp
Papaya pastes 1 tbsp
Melted butter 4 ounce
METHOD
Marinate chicken overnight and bake for 1 hour, cover in a foil.
Ingredients for Rice
Oil ½ cup
Brown onion ½ cup
Green chilies 3-4
Coriander leaves handful
Cumin seeds 1 tsp
Star anis 1
Cinnamon ¼ tsp
Coriander 1 tsp
Sesame seeds 1 tsp
Cloves 3
Green cardamom 2
Cashew nuts 10
METHOD FOR SPICE
Grind all together in a paste, add 1 tbsp to the rice mixture.
Other Ingredients
Ginger 2-inch piece
Garlic 6 cloves
Tomatoes 2
Blend all the above together
Rice ½ kg
Water 4 cups
METHOD
Heat oil, add brown onion with ginger garlic paste, whole green chilies, fresh coriander, spice powder, blended paste, cook well, add water or stock, boil, then add soaked rice and cook till rice done.
TO SERVE
Tomatoes 2 cut in cubes, onion 2 cut in cubes and 6 green chilies. Bake or cook these on open flame. Heat 2 tbsp oil, roast veggie cubes with whole green chilies, salt, pepper and above masala ½ tsp, serve the rice in a platter, put chicken on top with vegetables covered with foil, bake for 20 mins, put fried veggies on top of rice and chicken.
CHOPS SHALIMAR
Ingredients
Mutton chops 1 kg
Ginger garlic paste 2 tbsp
Chili powder 3 tsp
Salt 1 ½ tsp
Turmeric ½ tsp
Fresh cream ½ cup
Yogurt 1 cup
Onion 2 boiled and blended
Coconut milk powder 2 tsp
Coriander powder 2 tsp
Bay leaf 1
Cumin 1 tsp
Green cardamom 3
Green chilies 6
Clarified butter ½ cup
Boil & Blend
Almond ¼ cup
Cashew ¼ cup
Sesame seeds ¼ cup
METHOD
Heat ghee, add whole spices with boiled onion paste, ginger garlic, cook for 5 mins, add mutton chops, cook for 10 mins, add 1 ½ cup water, cover and cook till chops nearly done, then add all the spices and yogurt, cook well, add cashew nut paste blended with milk, lastly add cream, garnish with fried green chilies. Serve with nan.
