Breakfast: Makes 4 serving
Calories per 267g serving & 1 cup unsweetened soy milk:
Calories 547, Protein: 38g, Carbs: 68g, Fat: 16g
1 medium ripe banana
200g dry GF rolled oats
5 scoops Vanilla protein powder (Save 20% Sproutliving, code: slimonplants)
1 tsp baking powder
1/4 (30g) cacao powder
1.5 cup unsweetened soy milk
1 tbsp vanilla extract
2 tbsp ground flax seeds
30g dark chocolate chips
30g powdered peanut butter (to drizzle on top, mixed with water)
1 cup frozen raspberries & 1/3 cup to add on top
Mix everything in a baking dish. Bake at 375F for 25-30 minutes.
Lunch: Recipe makes 2 or 1.5 servings
Calories per 250g fava bean tofu, 150g rice, 200g cucumber, 100g carrots:
Calories:526, Protein: 48g, Carbs: 79g, Fat: 1g
340g Fava bean tofu
1/4 cup Sweet Thai chili sauce or use low calorie (dilute with 1-2 tbsp water)
1 tbsp low sodium tamari
1 tbsp Chili garlic sauce ( depends on your preference)
1/3 cup chopped green onions
Air fry Fava bean tofu for 10 minutes at 400F with 1/2 tsp garlic powder, 1.5 tsp corn starch and some salt. Prep sauce in a bowl, add to a non-stick frying pan. let simmer for 60 seconds. Add air fried fava bean tofu, green onions and cook till the sauce is nicely absorbed. Serve with rice and your favorite veggies.
Dessert/Snack: Sweet Potato brownie
Calories per 100g serving: 138, Protein 6g, Carbs: 24g, Fat: 3g

Calories: 506, Protein: 47g, Carbs:56g, Fat:12g
160g dry red lentils (about 2/3 cup)
1 medium size onion
2 medium size tomatoes
1 red bell pepper
1 large diced carrot
2 large celery stalks
1 tbsp Vegetable bullion mixed in 3 cups of hot water
400ml low fat coconut milk
6-8 cloves of garlic
1.5 tsp grated ginger
1.5 tbsp tomato paste
2 green chilies (adjust per preference)
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp turmeric powder
Salt per taste
cilantro per taste
