After a week of overeating/drinking every single day we needed to give our bellies a break with some veggies.
Ok, this is not a detoxing salad dressed with water and lemon, it's a luscious drenched in olive oil roasted veggies medley.
We decided to enhance this wonderful, colorful recipe spreading roasted garlic on fresh baguette and using our veggies as a final topping: it tasted insanely good.
INGREDIENTS:
3 garlic heads
olive oil
salt and pepper
parchment paper and cooking twine needed for roasted garlic
1 eggplant sliced and quartered
1 zucchini sliced
1 red onion sliced keeping rings together
2-3 unripened tomatoes
3-4 golden potatoes thinly sliced
dried oregano
sliced baguette for serving
