A bread-like accompaniment for soups, and Mexican dishes. If you like things spicy, add hot picante sauce or hot sauce. Good will chili.
Salsa Corn Cakes
1 1/2 cups all-purpose flour
1/2 cup cornmeal
1 teaspoon baking powder
1 teaspoon salt
6 ounces cream cheese, softened
6 eggs
1 cup milk
1/4 cup butter, melted
1 (15 ounce) can whole kernel corn, drained
1/2 cup salsa
1/4 cup sliced green onions
sour cream and additional salsa, optional
In a mixing bowl beat cream cheese and eggs. Slowly add the milk and butter. Add the flour, cornmeal, baking powder, and salt.
Fold in the corn, salsa, and onions.
Pour batter by 1/4 cupfuls onto a greased hot griddle or skillet. Turn when bubbly around the edges and bottom is golden brown. Flip and fry until the second side is a golden brown.
Serve with sour cream and salsa, if desired.
YIELD: 18-20 corn cakes
