To cook bitter melon (ampalaya) without bitterness , you can follow these additional steps:
1. Slice the ampalaya thinly and remove the white spongy seeds inside.
2. Sprinkle a generous amount of salt over the slices and rub it in. Let it sit for about 5 to 30 minutes. This helps reduce the bitterness.
3. Rinse the salted ampalaya slices thoroughly with water to wash away the salt and bitterness.
4. Optionally, you can squeeze the slices to remove excess water which also reduces bitterness.
5. Cook the ampalaya by sautéing it with onions, and tomatoes. You can add some soy sauce or fish sauce for more flavor.
6. You may also blanch the slices briefly in boiling water with a little oil for 1 minute before cooking to lessen bitterness.
7. Some Filipino recipes use dipping or marinating the cooked ampalaya in fermented fish sauce (burong isda) or shrimp paste (alamang) for extra taste without bitterness.
