Vanilla pudding:
4 medium white or Japanese sweet potatoes, steamed or baked
4 tbsp cashew butter, for nut-free option use tahini
2 tsp vanilla bean powder
2 1/4 cups milk, add gradually and adjust to your preferred consistency
1/3 cup + 2 tbsp date paste, or to taste (or 4-6 pitted medjool dates)
Optional:
Fruit toppings of choice.
If using protein powder, use 3 sweet potatoes instead of 4. Add 4 tbsp of protein powder.
Instructions:
Combine all the ingredients in a high-speed blender. Blend until completely smooth. The pudding will have a slight gloss to it.
Transfer to serving dishes, cover, and chill in the fridge for minimum 1 hour. Optionally top with fruit and enjoy!
