Ingredients :-
Good Quality Basmati Rice (अच्छी गुणवत्ता वाला बासमती चावल) - 1 kg
For Biryani Masala :
Coriander Seeds (साबूत धनिया) - 2 tbsp
Cumin (साबूत जीरा) - 1 tbsp
Caraway Seeds (शाह जीरा) - 2 tsp
Cinnamon (दालचीनी) - 3 Inch
Black Pepper Corn (काली मिर्च) - 1 tbsp
Cloves (लौंग) - 2 tsp
Green Cardamom (हरी इलायची) - 2 tbsp
Black Cardamom (काली इलायची) - 5-6 nos
Mace (जावित्री) - 3 nos
Spicy Red Chilli (तीखी लाल मिर्च) - 6-7 nos
Bay Leaf (तेज़ पत्ता) - 6-7 nos
Musk Fenugreek (कस्तूरी मेथी) - 1 tbsp
Nutmeg (जायफल) - Half
Turmeric (हल्दी) - 1/2 tsp
Salt (नमक) - A Pinch
For Birista :
Evenly Sliced Onion (समान रूप से स्लाइस किया हुआ प्याज) - 1 Kg
Oil (तेल)
For Chicken Marination :
Chicken (चिकन) - 1 Kg
Ginger Garlic & Green Chilly Paste (अदरक लहसुन और हरी मिर्च का पेस्ट) - 4-4 tbsp
Turmeric (हल्दी) - 1 tsp
Coriander Powder (धनिया पाउडर) - 3 tbsp
Kashmiri Red Chilli Powder (कश्मीरी लाल मिर्च पाउडर) - 3 tbsp
Spicy Red Chilli Powder (तीखी लाल मिर्च पाउडर) - 1 tsp
Fresh Homemade Biryani Masala (ताजा घर का बना बिरयानी मसाला) - 3 tbsp
Salt as Taste (स्वादानुसार नमक)
Lemon Juice (नींबू का रस) - Half
Left Over Birista Oil (बचा हुआ बिरिस्ता का तेल) - 4-5 tbsp
Curd (दही) - 300 gm
Birista (बिरिस्ता) - 80%
Chopped Coriander (कटा हुआ हरा धनिया) - Big Handful
Chopped Mint Leaves (कटा हुआ पुदीना) - Big Handful
Ghee (घी) - 1 tsp
For Chicken Yakhani :
Desi Ghee (देसी घी) - 2 tbsp
Marinated Chicken (मैरीनेटेड चिकन)
For Boiling Basmati Rice :
Khade Masale Ki Potli (खड़े मसालों की पोटली)
Caraway Seeds (शाहजीरा) - 1 tsp
Cinnamon (दालचीनी) - 1 Inch
Cloves (लौंग) - 8-10 Nos
Green Cardamom (हरी इलायची) - 4-5 Nos
Black Pepper Corn (काली मिर्च) - 8-10 Nos
Star Anise (चकरीफूल) - 1 Nos
Bay Leaf (तेज़ पत्ता) - 5-6 Nos
Slit Green Chilli (कटी हुई हरी मिर्च) -2 Nos
Lemon Juice (नींबू का रस) - Half

For Biryani Layering :
Prepared Chicken Yakhani (तैय्यार की हुई चिकन की यखनी)
Chopped Coriander (कटा हुआ हरा धनिया) - Handful

Fresh Homemade Biryani Masala (ताजा घर का बना बिरयानी मसाला) - A Pinch
80% Cooked Basmati Rice (80% पका हुआ बासमती चावल)
Melted Ghee (पिघला हुआ घी) - 4-5 tbsp
Saffron Milk (केसर वाला दूध) - 4-5 tbsp
Birista (बिरिस्ता) - 20%
Chopped Coriander (कटा हुआ हरा धनिया) - Handful
