Ingredients :
Dry Fruits
• Almonds (बादाम) – 200 g
• Cashews (काजू) – 100 g
• Pistachios (पिस्ता) – 100 g
• Walnuts (अखरोट) – 100 g
• Dry Dates (खारेक) – 100 g
• Raisins (किशमिश) – 50 g
• Fox Nuts / Makhana (मखाने) – 100 g
• Grated Dry Coconut (कसा हुआ सूखा नारियल) – 100 g
Seeds
• Pumpkin Seeds (कद्दू के बीज) – 50 g
• Sunflower Seeds (सूरजमुखी के बीज) – 50 g
• Melon Seeds (खरबूजे के बीज) – 50 g
• Poppy Seeds (खसखस) – 25 g
Powdered Spices
• Cardamom Powder (इलायची पाउडर) – 25 g
• Ganthoda Powder (गांठोड़ा पाउडर) – 25 g
• Dry Ginger Powder / Sonth (सोंठ पाउडर) – 25 g
• Batrisu Powder (बत्रिसू पाउडर) – 25 g
Key Ingredients (4G’s)
• Desi Ghee (देसी घी) – 750 g
• Jaggery (गुड़) – 1 kg
• Edible Gum / Gond (गोंद) – 200 g
• Coarse Wheat Flour (दरदरा गेहूं का आटा) – 400 g
Method
1. Roast the Almonds
Heat 2–3 tablespoons of ghee in a pan. Once hot, add the almonds and roast for 2–3 minutes until slightly golden and aromatic. Transfer to a bowl.
2. Roast Remaining Dry Fruits
In the same pan, add cashews, pistachios, walnuts, and dry dates. Roast for 1–2 minutes until slightly golden and fragrant. Transfer to the same bowl.
3. Roast the Seeds
Add pumpkin seeds, sunflower seeds, and melon seeds to the same pan. Roast for 1 minute. Transfer to the same bowl.
4. Roast the Dry Coconut
Add the grated dry coconut and roast until slightly crispy and light golden. Transfer to the same bowl.
5. Roast the Makhana
Add more ghee if needed, then roast the makhanas for 5–6 minutes until crispy. Transfer to a separate bowl.
6. Roast the Edible Gum (Gond)
Add 4–5 tablespoons of ghee to the same pan. Add the edible gum and roast until it puffs up and becomes translucent. Transfer to a separate plate and allow to cool.
7. Cool & Grind
Let the dry fruit mixture, makhana, and roasted gond cool completely.
• Grind the dry fruit mixture into a coarse powder.
• Grind the makhana and edible gum into a fine powder.
8. Roast the Wheat Flour
Add 150–200 ml ghee to the pan. Add the coarse wheat flour and roast for 8–10 minutes until aromatic and light golden.
9. Combine Everything
Add the roasted wheat flour to the dry fruit mixture and mix well.
10. Melt the Jaggery
Add the remaining ghee to a large kadhai and heat slightly. Add jaggery and cook on low flame until completely melted and blended with the ghee.
Add the dry fruit mixture and mix thoroughly.
11. Add Powdered Spices
Add ganthoda powder, sonth (dry ginger) powder, batrisu powder, poppy seeds, and raisins. Mix everything well.
12. Final Step
Your Gujarati Vasanu is ready.
Allow the mixture to cool slightly, then shape into laddoos of your preferred size — small or Big.
