Complete Written Recipe with Ingredients & Method for Baingan ka Bharta Desi Style
Prep time: 10-15 Mins
Cooking time: 25-30 Mins
Serves : 4-5 People
Ingredients :
Vegetables :-
EGGPLANT (बैंगन) - 2 Big Size
TOMATOES (टमाटर) - 3 Medium Size
PEELED ONIONS (छिले हुए प्याज) - 4 Medium Size
GREEN CHILLIES (हरी मिर्च) - 8-10 Nos
Bharta Spice Mix :-
CORIANDER SEEDS (धनिये के बीज) - 1.5 Tbsp
CUMIN (जीरा) - 1 Tsp
BLACK PEPPER (काली मिर्च) - 1 Tsp
DRY RED CHILLIES (सूखी लाल मिर्च) - 3-4 Nos
GARLIC CLOVES (लहसुन की कलियाँ) - 10-12 Nos
GINGER (अदरक) - 1 Inch
ROASTED GREEN CHILLIES (भुनी हुई हरी मिर्च) - 7-8 Nos
WATER (पानी) - A Little Bit
Cooking the Bharta :-
OIL (तेल) - 3-4 Tbsp
CHOPPED ROASTED ONION (भुना हुआ प्याज कटा हुआ)
PEELED ROASTED TOMATOES (छिले हुए भुने हुए टमाटर)
PREPARED SPICE MIX (तैय्यार किया हुआ मसाला)
TURMERIC (हल्दी) - 1/4 Tsp
KASHMIRI RED CHILLI POWDER (कश्मीरी लाल मिर्च पाउडर) - 1/4 Cup
SALT AS TASTE (स्वादानुसार नमक)
HOT WATER (गरम पानी)
PEAS (मटर) - 1/4 Cup
SPRING ONION GREENS (हरे प्याज़) - 1/4 Cup
GREEN GARLIC (हरा लहसुन) - 1/4 Cup
LEMON JUICE (नींबू का रस) - Half
FRESH CORIANDER (ताजा धनिया) - Handful
Method :
Roasting Vegetables on Live Coals :-
Make a few incisions on the eggplants and stuff 10–12 garlic cloves inside.
Brush mustard oil generously all over the eggplants.
Place them on the BBQ griller and let the live coals char them beautifully.
Add 3 medium tomatoes, 4 medium peeled onions and 8–10 green chillies to the griller as well.
Let all the vegetables roast slowly and evenly over the live coals.
Green chillies roast very quickly, so once nicely charred, remove them into a bowl.
When the tomatoes and onions are roasted on one side, flip and roast the other side as well.
Once done, collect them all in the same bowl.
Eggplants take longer, so keep turning them until the skin is completely charred.
Transfer the roasted eggplants to a bowl, cover them, and let them rest for 5–10 minutes.
This helps the heat travel inside, making the flesh perfectly soft.
After resting, place them on a chopping board and remove the skin.
Roughly chop the roasted eggplants.
Preparing the Spice Mix :-
Heat a clay tawa and add coriander seeds, cumin seeds, black pepper and dry red chillies.
Roast them for a minute until fragrant.
Transfer to a sil-batta and let them cool completely.
Once cooled, coarsely pound them.
Add garlic cloves, chopped ginger and the roasted green chillies.
Pound everything well together.
Add a little water to help pound the mixture smoothly.
Your spice mix for the bharta is ready.
Cooking the Bharta :-
Heat 3–4 tbsp oil in a clay pot.
Add the chopped roasted onions and cook until they start to get some colour.
Now add the peeled roasted tomatoes and mash them lightly.
Cook until they turn soft and mushy.
Add the prepared spice mix along with turmeric, Kashmiri red chilli powder and salt to taste.
Give it a good stir.
Splash in some hot water and cook the masala for 3–4 minutes.
Once the oil separates, add the roasted chopped eggplants
along with peas, spring onion greens and green garlic.
Mix well and cook for 3–4 minutes.
Cover the pot and cook on low heat for 10–15 minutes,
stirring occasionally to prevent it from sticking.
Finish with a splash of lemon juice and a handful of fresh coriander.
Give it all a good mix.
