Ingredients:
1 3/4 lb of minced pork
1 1/2 cups of coconut milk (divided)
2 tbsp of prahok (fermented fish paste)
3 tbsp of fish powder (dry smoked fish)
1/4 cup of thai pea eggplants
thai chili peppers (add as much as you like)
6 cloves of garlic cut in half
15 kaffir lime leaves (whole and sliced thinly for garnish)
1 1/2 tbsp of red curry paste (Maesri brand)
1/4 cup of kroeung (lemongrass paste)

Seasonings: *adjust seasonings to taste
1 1/4 tbsp of sugar
1 tsp of salt
1/2 tbsp of chicken bouillon
1/2 tbsp of msg (optional)
1/4 tbsp of tamarind soup mix
