Gilani Sirghelieh Stew | Fragrant and authentic local food | Rural cuisine

Sirghelieh is an old and local stew of northern Iran, especially Gilan; a dish whose main base is fresh garlic leaves.
Garlic leaves may be an unfamiliar ingredient to many, but in this dish, it creates a deep and special aroma and flavor that can rarely be found anywhere else.
In this video, I prepare Sirgholieh in a quiet rural atmosphere and in a traditional way, and I also show you how to pick and use garlic leaves; a part of everyday life that is quiet, simple, and close to nature.

Ingredients for cooking fried garlic:
500 grams of fresh garlic leaves
4 cups of water
4 eggs
6 tablespoons of orange juice
1 chicken piece
Salt and turmeric powder
Pepper powder as needed
