This golden syrup cake is soft, sticky, and full of old-fashioned comfort. It’s part cake, part pudding, and baked in a water bath for that lovely, steamed texture. The golden syrup base turns rich and caramelised in the oven, and it’s finished with a warm drizzle over the top. A little cream or custard on the side never hurts either.
I found the recipe in a second-hand cookbook, and it’s so good I haven’t changed much at all. In the video, I show you how to make both the original and a gluten-free version — and honestly, they both turn out beautifully soft and just as delicious.

📖 This lovely golden syrup cake is from “Bake Your Cake & Eat It Too!” by Jane Harrop — a sweet little cookbook I found in a second-hand shop. The photo on the cover completely won me over, and I’ve been making the recipe ever since — including a gluten-free version that works beautifully too.
