This spicy dipping sauce is the perfect compliment to sticky rice and any/every meat !!!

Ingredients:
6 Tomatoes
6 Red or Green Thai Chili Peppers
1 Tbsp Fish Sauce
1 Tbsp Sugar
1 Lime
1/2 Cup Cilantro, chopped
7 Cloves of Garlic (Half a Head)
2 Shallots (optional)
Directions:
Cut tomatoes into quarters
Cut shallots in half
Place tomato, shallots, chili peppers and garlic on a baking sheet and roast at 400 or broil on high for approx. 15-25 minutes (take the shallots, garlic and peppers out after 15 mins)
Place garlic, shallots and peppers in a mortar and smash them until they are well blended
Add tomatoes and smash slowly until a sauce is formed
Add sugar and fish sauce
Add lime
Add cilantro
Mix well and taste and adjust as needed.
Refrigerate and enjoy=)
