This recipe gives you soft, fall-off-the-bone paya with rich masala that taste heaven-like
goodness.
Ingredients - 0:28
• burnt paya (goat legs) - 8 pieces
• Onion – 2 nos
• Tomato – 3
• Coconut – ½ cup
• Green chillies – 4
• Red chilli powder – 1½ tbsp
• Coriander powder – 2½ tbsp
• Turmeric powder – 1 tsp
• Coriander leaves – handful
• Mint leaves – handful
• Cinnamon – small piece
• Cardamom – 3 or 4
• Cloves – 3 or 4
• Ginger–garlic paste – 3 tbsp
• Oil – 1 cup
• Salt – as per your taste

Method
1. Pressure cook the paya until 75% tender. Add
• Ginger–garlic paste
• Turmeric
• Salt
• Oil
2. Make a purée with grounded coconut & tomato.
3. Add:
• Red chilli powder
• Coriander powder
• Turmeric
• Green chillies
• Coriander leaves
• Mint leaves
To the 75% cooked paya & Cook for 15 minutes.
4. In another pan, heat oil.
Add:
• Cinnamon
• Cardamom
• Cloves
• Sliced onions
Sauté until golden brown.
5. Add ginger–garlic paste and sauté for another one minute.
6. Add this mixture to the paya and pressure cook until the paya becomes tender and oil separates.
7. Serve hot with:
• Appam
• Idiyappam
• Parotta
