Tri-Tip on the Kamado Joe!

Tri-Tip on the Kamado Joe Big Joe! PS Seasonings Kink Shallot Black Garlic!

• Started with a nice Tri-Tip from Costco
• Seasoned with PS Seasonings King Shallot Black Garlic
• Set up the Kamado Joe for direct and indirect cooking.
• Lit the charcoal in the Big Joe to hold around 250F degrees.
• Placed the Tri-Tip on the indirect side until it reached about 100 degrees and then turned it over to promote even cooking until 122.
• Pulled it off and let the grill get nice and hot and started the sear.
• Seared for 2 minutes a side and kept flipping to avoid burning and then pulled it to rest.
• Let it rest for about 15 minutes before cutting into them.

Summary: The Tri-Tip from Costco was a little tougher than others I had. The PS Seasonings King Shallot has outstanding flavor!
