麸质(Fū zhí)又称麸质蛋白、谷胶蛋白或俗称面筋,是指一组种子贮藏蛋白或某些种类谷物的蛋白质复合物,特别是在胚乳、麦麸中也含有这些蛋白质; 其成分主要由两种蛋白质组成,即醇溶蛋白和谷蛋白。
麸质蛋白存在于多种谷物中,例如大麦、小麦、燕麦和黑麦。它具有弹性,所以能给面包或面条带来耐嚼的口感。
但是对于部分人群,麸质会引起一些不良反应。这些不良反应统称为:麸质相关失调。这款无麸质面包使用了米粉和杏仁粉来制作,适合麸质过敏者食用。
乳糜泻(Rǔmí xiè)或麸质过敏者,请购买有标识无麸质的材料以避免交叉污染。
Gluten, also known as gluten protein, refers to a group of seed storage proteins or protein complexes of certain types of grains, especially the endosperm and wheat bran also contain these proteins; its ingredients are mainly composed of two kinds of proteins, Namely gliadin and glutenin.
Gluten proteins are found in many grains, such as barley, wheat, oats and rye. It is elastic, so it can give bread or noodles a chewy texture.
For some people, gluten can cause some adverse reactions. These adverse reactions are collectively referred to as: gluten-related disorders. This gluten-free buns is made with rice flour and ground almond and is suitable for people with gluten allergies.

杏仁粉 Ground Almond : 50g (1/2 cups)

水 Water : 130g (1/2 cups)
糖 Sugar : 20g (1 2/3 tbsp)
盐 Salt :
2g (~1/2 tsp)
酵母 Instant Dry Yeast :
3g (1/2 tsp)
植物油 Vegetable Oil :15g (1 tbsp)
核桃 Walnut : 20g (~1/4 cups)
蔓越莓干 Dried Cranberries :
45g (~3/8 cups)
