HALAL GUYS CHICKEN GYRO
Ingredients for Red Sauce
Kashmiri red chilies 8 soaked in hot water for 10 mins
Paprika 1 tbsp
Chili powder 1 tsp
Salt 1 tsp
Sugar 1 tbsp
Vinegar 2 tbsp
Tomatoesblanched and peeled 2
METHOD FOR RED SUACE
Blend all the ingredients together and pour in a nozzle bottle.
Ingredients for White Sauce
Yogurt 1 ½ cup
Mayonnaise ¾ cup
Vinegar 2 tbsp
Lemon juice 2 tbsp
Caster sugar 1 tbsp
Black pepper 1 tsp
Parsley 1 tsp
Salt ½ tsp
Milk 4 tbsp
METHOD FOR WHITE SAUCE
Mix all together and put in a nozzle bottle
TURMERIC RICE
Ingredients
Soaked rice 2 cups
Chicken stock 4 cups
Turmeric 1 tsp
Salt 1 tsp
Paprika ½ tsp
Cumin crushed ½ tsp
Garlic pastes 1 tbsp
Oil ¼ cup
METHOD FOR RICE
Heat oil in a pan, add garlic, fry, add seasonings and the soaked rice, add stock, cover and cook till boiling, leave it on dum for 15 mins covered.
Ingredients for Chicken Gyro
Chicken thigh boneless pieces 1 kg
Oil ¼ cup
Lemon juice 2 tbsp
Garlic pastes 1 tbsp
Oregano 1 tbsp
Parsley 1 tbsp
Cayenned pepper 1 tbsp
Coriander powder 1 tbsp
Chili powder 1 tsp
Black pepper 1 tsp
Salt 1 ½ tsp
METHOD
Marinate chicken with all the given ingredients, grill on a greased pan for 5 mins on each side, when done chop roughly, serve with turmeric rice, iceberg lettuce, tomato on side, pita bread toasted on side, drizzle both the sauces on top, serve with fries.
TANDOORI CHICKEN FINGERS
Ingredients
Chicken boneless cubes 500 gm
Salt 1 tsp
Green chilies chopped 4
Chopped coriander leaves 2 tbsp
Tandoori masala 2 tbsp
Allspice ½ tsp
Tandoori color ¼ tsp
Ginger garlic paste 1 tbsp
Lemon juice 2 tbsp
Whole coal to give dum
Oil ¼ cup
METHOD
Mix all the ingredients in chicken cubes, give dum of coal, chopperise in small batches to a fine mince, mix well. Spread cling film or foil on a table, spread your entire chicken mince in shape of rectangle, neaten the edges with help of a knife, wrap with foil on top and transfer to any tray, freeze for 2 hours until firm, remove from freezer, cut into fingers, keep fingers again in a tray, and re-freeze for 1 hour, dip each finger In beaten egg, coat with bread crumbs, fry few pcs at a time till golden. These fingers should be fried frozen or the fingers will lose its shape.
