CREAMY TOMATO SOUP WITH CRISPY CHEESE BITES
Ingredients for Soup
Butter 2 ounce
Garlic 1 tbsp
Tomatoes chopped ½ kg
Tomato puree 2 tbsp
Water 1 cup
Chicken powder 1 tsp
Corn flour 1 tbsp
Oil 2 tbsp
Onion chopped ½ cup
Oregano 1 tsp
Chicken stock 3 cups
Sugar 3 tbsp
Cream 3 tbsp
METHOD FOR SOUP
Heat butter in a pan, add in oregano with roasted onion, tomatoes and garlic, and 2 green chilies, fry for 5 mins, add 2 cups stock, cook for 10 mins, then blend the mixture well, add remaining stock, cook with salt, sugar, chicken powder, cook well, if required thicken with corn flour paste, serve with deep fried cheese bites.
Ingredients for Cheese Bites
Mozzarella cheese cut into cubes 1 cup
Dry flour ½ cup
Flour 3 tbsp mixed in ¼ cup water
METHOD FOR CHEESE BITES
Cut mozzarella into small cubes, spread in dry flour, then flour slurry, then coat in bread crumbs, put in freezer for 30 mins, deep fry, serve with soup.
CHICKEN DRAGON RICE PLATTER
Ingredients
Chicken julienne ½ kg
Corn flour 4 tbsp
Ginger garlic paste 1 tbsp
Egg 1
Crushed red pepper 1 tsp
Green chili pastes 1 tbsp
Salt ½ tsp
Soy sauce 1 tbsp
Black pepper ½ tsp
METHOD
Marinate chicken with all the given ingredients and deep fry.
Ingredients for Sauce
Oil ¼ cup
Chopped garlic 1 tbsp
Button red chilies 6
Ketchup 4 tbsp
Chili garlic sauce 4 tbsp
Schezwan sauce 2 tbsp
Salt ½ tsp
Water ½ cup
Sliced onion 1
Capsicum cut in julienne 1
Corn flour to thicken the sauce 1 tbsp
Spring onion julienne as required
Garlic rice to serve
METHOD
Heat ¼ cup oil, add chopped garlic, button red chilies, all the sauces with water and veggies, add corn flour to thicken, lastly add spring onion julienne and fried chicken, cook for 2 mins, remove, serve with garlic rice.
