These baked beans are a hit at any party, BBQ or pot luck because they go with everything! Don't be surprised if the bacon gets nabbed first. Sometimes I cut the bacon pieces in half, so more servings get their own piece. You'll love these so much they can be eaten alone, made into "beanie weenies," or served as a side dish for practically any occasion.
This bean recipe has been in the family so long, (over 60 years), it has been readjusted as manufacturer can sizes change, to fit the serving dishes we like to use. (1.5 liter). Whenever these are brought to a pot luck, I get requests for this dish. I hope you like it as much as we do!
Recipe:
36 oz. canned baked beans (that's usually one 28 oz. can and one 8 oz. can)*
1 medium onion, finely chopped
1/4 cup + 2 teaspoons ketchup
1/4 cup + 2 teaspoons firmly packed brown sugar
2 tablespoons + 1 teaspoon molasses
1/2 teaspoon + 1/8 teaspoon dry mustard
1/8 teaspoon fresh ground pepper
1/8 teaspoon salt
approximately 3 slices bacon
Directions:
In a large bowl, mix all ingredients together, except onion, beans and bacon, to make sauce.
Add chopped onion and mix together.
Add beans and stir gently until fully mixed.
Pour into a 1.5 liter, oven proof casserole or baking dish.
(My baking dish measured 7" x 7" x 3")
Slice bacon to the size of your baking dish, and place in a single layer on top of the beans.
(Try not to overlap the bacon slices).
Cover with a lid or foil.
Bake at 350 degrees (Fahrenheit) (in a pre-heated oven) for 1.5 hours, until the bacon is done and the top is bubbly. Remove the lid after 1 hour of baking. (If the bacon is not done after 1.5 hours, bake until it's fully cooked).
Let sit about 5 minutes before serving.
I've used Van De Camp beans, Bush's beans and B&M beans for this recipe. They all work well. Whichever brand you use, it's best if you don't mix brands. Get two cans of the same brand for best results.
