Pork Filling
3/4 pound ground pork
3 garlic cloves, minced
1/2 onion, diced
1/4 tsp salt
2 tsp fish sauce
1 Tbsp chicken/mushroom bouillon
1 Tbsp oyster sauce
2 tsp sesame oil
1 tsp black pepper
1/4 cup dried wood ear mushrooms or shiitake, chopped
1 tsp sugar
2 tsp cornstarch
1/4 cup water chestnuts, diced
1/2 - 1 Chinese sausage for pork filling (optional), diced

12 quail eggs or 6 regular eggs (cut in half)

400 grams all purpose flour
1/2 cup warm milk (124 g)
1/2 cup warm water (118 g)
4 Tbsp sugar (50 g), divided
1 Tbsp dry active yeast (9 g)
1 tsp baking powder (5 g)
1 1/2 tsp salt
2 Tbsp oil (26 g)
