BUSS UP SHUT ROTI
INGREDIENTS
4 cups Flour
1 1/2 - 2 teaspoons salt
2 - 4 teaspoons sugar
2 cups warm water, sometimes it takes 1/4 cup less, so start off with 11/2 cups and add as desired.
2 teaspoons baking powder
1 tablespoon oil for rubbing on top of the dough
Filling the Dough
4 tablespoons Ghee butter or your chosen preference.
Fill and Wrap Paratha Roti:
Divide Dough into 4 or 5 equal parts
Cooking the Roti
1/4 - 1/2 cup canola or vegetable oil for frying or cooking the roti

CURRY CHICKPEAS & POTATOES
INGREDIENTS:
2 tablespoons canola oil
1/2 teaspoon geera seeds (cumin seeds)
12 curry leaves, optional
8 cloves garlic, minced
2 scallions chopped
2 tablespoons curry powder
6 sprigs cilantro or chadobeni leaves, chopped, divided, use 2 for garnish ,
6 sprigs fresh methi leaves , finely chopped
4 potatoes, peeled and chopped
2 cups raw dry channa, soaked overnight and boiled until soft the next day
1 teaspoon ground geera/cumin
2 1/2 cups water
1 teaspoon salt or to taste

PUMPKIN TALKARIE
INGREDIENTS:
2 - 4 tablespoons canola oil
10 large cloves of garlic, minced
2 pounds pumpkin, peeled and cubed
1/2 habanero or scotch bonnet pepper
1 teaspoon salt (or to taste)
