面包机 南瓜面包篇(2次发酵) Bread Maker - Pumpkin Bread

刚烤好的南瓜面包香味十足,金黄的颜色太美了😀一出炉就被小瓜们消灭了一半,而且南瓜营养价值丰富,老少咸宜 :)
面包机方便省时,设置上的时间多数是一次发酵,今天我用半手动的方法来做2次发酵的南瓜面包,面团发酵的好不止可以增加口感,也可以增加风味哦:)

TESCO 面包机 (BM1333) 南瓜面包篇 - Pumpkin Bread

材料 Ingredients :
南瓜 Pumpkin : 150g
高筋面粉 (Bread Flour) : 300g
奶粉 Milk Powder : 10g
牛奶 (Milk) : 55ml (视情况加减)
糖 (Sugar) : 50g
盐 (Salt) : 3g
酵母 (Instant Yeast) : 4g
鸡蛋 (Egg) : 1pc
无盐牛油 (Unsalted Butter) : 30g

Method:
1. Smash the steamed pumpkin into paste and allow it to cool down.
2. Add milk, egg and pumpkin paste into the bread pan.
3. Then add sieved flour, sugar, salt and yeast.
4. Place the bread pan into the bread maker, then select "MENU" and choose " 8. Dough", then press " START ".
5. After 8 minutes of mixing the dough, we should check its moisture. If it is too moist and sticky, more flour can be added; if it is too hard and dry, a little bit of milk can be added.
6. When the screen shows at 1:10, long press "START " to reset.
7. Add butter into the bread pan, and select "8. Dough", then press "START".
8. The bread maker will stop stirring when the screen shows at 1:05.
9. Remove the blade and form the dough into a ball shape and put it back to the bread pan, then let it proof for the first time.
10. After the session end, let's check if the dough has risen well.
11. The dough should be about double the size it was when it started. The dough that has successfully risen/proofed will spring back slowly when poked and leave an indent.
12. Spread some flour on the kneading pad.
13. Remove the risen dough from the bread pan. Deflate it gently and split it into 3 parts, and shape them into a ball shape.
14. Cover the dough with baking paper and allow it to rest for 15 minutes.
15. After resting, roll the dough to form a flat rectangle then flip and roll it up. Lift it up and turn vertically and roll it flat again, then roll it up again (you can refer to the video).
16. Place the dough back to the bread pan and allow it to proof and fill up 80% of the space, do not turn on the power.
17. After an hour, the dough is ready to be baked.
18. Select "MENU" and choose " 12. Bake", select "COLOR" and choose " Light", and then press " START ".
19. The bread is ready to be served when the sound of “Pi-Pi” is heard.



小提示:
1.面包机选项12.bake的设定是一个小时,如果喜欢面包上色浅一些的朋友可以提早10-15分钟拿出来哦:)
2.液体用冷牛奶/冷鸡蛋/冷开水有助面团温度没那么快上升

不同的材料会导致成品出现落差,视频仅是个人学习心得和手法,仅供参考哦:)
