🧂 Ingredients
For the Kadhai Masala (fresh spice mix)
1 tbsp coriander seeds
1 tsp cumin seeds
3–4 dry red chilies
(Dry roast them in a pan for 1–2 minutes, then grind coarsely and keep aside.)
For the Curry
250 g paneer (cut into cubes)
1 large onion (sliced)
1 large capsicum (sliced)
2 tomatoes (pureed)
1 tsp ginger-garlic paste
2 tbsp oil or ghee
½ tsp turmeric powder
1 tsp red chili powder
½ tsp garam masala
1 tsp kasuri methi (crushed)
Salt to taste
Fresh coriander leaves (for garnish)
👩🍳 Instructions
Prepare the Kadhai Masala:
Dry roast coriander seeds, cumin seeds, and red chilies until fragrant. Cool and grind coarsely.
Sauté the Vegetables:
Heat 1 tbsp oil in a pan or kadhai.
Add onion and capsicum. Stir-fry for 2–3 minutes (keep them slightly crunchy).
Remove and keep aside.
Cook the Base:
In the same kadhai, heat another 1 tbsp oil.
Add ginger-garlic paste and sauté for a minute.
Add tomato puree, turmeric, red chili powder, and salt. Cook until oil separates.
Add Masala & Paneer:
Add the roasted kadhai masala and mix well.
Add sautéed onion and capsicum.
Add paneer cubes, ¼ cup water (optional for gravy), and mix gently.
Sprinkle kasuri methi and garam masala.
Simmer & Finish:
Cook for 2–3 minutes on low flame so paneer absorbs the flavors.
Garnish with fresh coriander.
🍛 Serve With
Kadhai Paneer tastes amazing with:
Butter naan or tandoori roti
Jeera rice or plain basmati rice
