The combination of fresh cardamom and vanilla reminds me of the different kinds of Swedish buns. One of my favourites is this Rhubarb Cardamom Bun. The unique taste of fresh cardamom and vanilla combined with the sweetness of marzipan and the sourness of rhubarb make this recipe unforgettable.
It makes up to 28 pieces.
Ingredients:
For the rhubarb compote:
400 g rhubarb
200 g sugar
1/2 tsp vanilla
For the Dough:
20 g fresh yeast
490–550 g all-purpose flour (start with the small amount first and see if you need more)
125 ml lukewarm water
125 ml lukewarm milk
80 g sugar
1 tbsp cardamom
1/2 tsp salt
125 g butter
For the filling:
260 g marzipan
200 g butter
4–7 tbsp water
An option for the decoration:
Crumble topping:
150 g all-purpose flour
75 g butter (room temperature)
75 g sugar
1/2 tsp vanilla
Oven temperature 200°C
Baking time 15 – 20 minutes
