To Make Cauliflower Pepper Fry

Cauliflower - 1 No.
Oil - 2 Tbsp (Buy: https://amzn.to/3KxgtsM)
Mustard Seeds - 1 Tsp (Buy: https://amzn.to/3KxgtsM)
Cumin Seeds - 1 Tsp (Buy: https://amzn.to/2NTgTMv)
Hing / Asafoetida - 1/4 Tsp (Buy: https://amzn.to/3OrZ9qe)
Onion - 3 Nos
Curry Leaves
Garlic - 20 Cloves
Ground Masala

METHOD:

FOR THE MASALA POWDER

1. Take a pan. Add fennel seeds, cumin seeds, whole peppercorns, coriander seeds and saute for a few seconds on a low flame.
2. Then add red chillies, cloves, cardamom and cinnamon. Saute for a few more seconds on a low flame.
3. Once all the ingredients start releasing a nice aroma, turn off the stove and cool down the ingredients completely.
4. Transfer the cooled ingredients to a mixer jar and grind it to a fine powder. Keep it aside.

FOR THE GOBI PEPPER FRY

1. Wash the cauliflower thoroughly and cut them into large pieces. Put them in a bowl.
2. Take a pan, add water and salt. Boil the water.
3. Turn off the stove and pour the hot water into the washed cauli florets bowl.
4. Blanch the cauli florets in hot water for 5 mins, strain off the water and keep the cauli florets aside.
5. Take a pan and add oil.
6. Add mustard seeds, cumin seeds to the oil and saute.
7. Once the mustards start splattering, add chopped onions, green chillies, curry leaves and pound ginger garlic.
8. One the onions are nicely roasted, add the ground masala powder and saute for 1-2 mins on a low flame.
9. Then add the blanched cauli florets to the pan and gently toss them to make sure all the masala coats the pieces on all sides evenly.
10. Roast the cauli florets with the masala for 2-3 mins. Garnish with freshly chopped coriander leaves.
11. Turn off the stove and transfer the fry to a plate.
12. Yummy Gobi Pepper Fry is ready to be served hot and nice as it is or with sambar rice/rasam rice.

Gobi pepper fry is a nice side dish with a special chettinad style masala powder. This can also be served as a starter. As the name itself suggests, this fry is a little spicy and it can be enjoyed with rice recipes like rasam rice/sambar rice/ curd rice etc. You can prepare the masala powder well in advance, store it and then use it up for making the fry whenever you want in just a few minutes. This makes a nice finger food, so whenever there are parties / get togethers at home, you can try this recipe very quickly and serve it to your guests.
