MacGregor Point Provincial Park. Winter Camping and Plant Based Chickin Fajitas

As February approached, we came across an upcoming warm spell towards Valentine's Day. With projected temperatures reaching above zero on the 14th, we decided to give it a go. We prepared by visiting Coven Plant Based Market in Kitchener, ON, in hopes of finding some type of unbreaded plant based chickin that we could use in our Fajitas dinner. As first time winter campers, we did fairly well with what we had, and hope to continue in the future. Next up is a cabin rental which should be quite a bit more comfortable. No meal plans yet, but we can assure you that it will be something delicious!

Wholetmans Fajita sauce

1/4 cup lime juice
1 T avocado oil
1 T chili powder
1 tsp smoked paprika
1/2 tsp cayenne pepper
1/2 tsp salt
chili flakes to taste

Wholetmans Tofu Egg Salad

340g extra firm tofu
1/4 cup chopped bread and butter pickles
1/4 cup chopped sweet onion
1/4 cup chopped celery
1/2 cup Vegan mayonnaise
1tsp turmeric(for eggy yellow colour)
1/2 tsp black Himalayan salt(for eggy flavour)
1/2 tsp black pepper

Mix well and Enjoy!
