This Soumbara Lafri recipe is brought to us from Guinea and features this famous condiment, made from fermented néré seeds, widely used in West Africa, the soumbala or soumara, or nététou in Wolof, dawadawa in igbo, ôdji in Poular, irù in Yoruba, afitin in fon-gbe, kainda in krio; more commonly known as African mustard.

This recipe, whose name would literally mean "soumbala smothered in rice", like many recipes that we discover, would also be a culinary specialty of the north of the Ivory Coast, in Mahou country.
