Elaine shows us how to make pudina chutney which is a versatile Indian condiment that's made from dhania, mint & peanuts. Enjoy.
Ingredients:
2 cups peanuts
6 green chilies
2 dried chilies
3 cloves garlic
1 bunch of mint
1/2 bunch of Dhania (Coriander/Cilantro)
Salt (according to your preference)
2 tablespoons tamarind water
Ingredients for braised Option:
Oil
1/2 chopped onion
1 green chili
1 teaspoon, mustard seeds
Method:
1) Toast the peanuts in a pan on low heat for 15 minutes or until brown.
2) Remove the skin from the nuts by rubbing it in your hands.
3) Add all the ingredients except the tamarind water into a food processor and blitz for 3 mins.
4) Add the tamarind water and salt then blitz again until it has the desired consistency.
If, you prefer to braise the mint chutney:
5) Brown the chopped onion, chili & mustard seed in some oil.
6) Once the onion has browned, add the mint chutney, switch off the stove and braise for a minute or two.
