This Guyanese dish of root vegetables (provisions) can be eaten on its own or paired with stew fish. If you want to try the root vegetables on its own, add salted fish to onions (more is better tasting).
Stew butter Fish
2 lbs. fish
2 lg. onions
1.5 lbs. tomatoes
1 Can stew whole Tomatoes
12 clove garlic
3 tsp. tomato paste
3 tbsp. black pepper
¼ cup oil
Cassareep to colour
Salt & pepper to taste.
(Use any fish that you like, lightly fried with salt and flour.)
Boil and Fry Root Vegetables
1 lbs. cassava
1 lbs. sweet potatoes
1 lbs. eddoes
1 lbs. plantains
4 large onions
Pepper as you like.
Salt to taste.
Spicy Fried Fish
2 lbs. fish
1-2 tsp chili pepper
2 tsp garlic powder
2 tsp curry powder
1 tsp turmeric
Salt to taste.
Oil to fry
