Guyana's national dish, Pepperpot made popular by Amerindian peoples. A meat stew flavored with CASSAREEP, (a thick sauce made from cassava), cinnamon, clove, thyme, wiri wiri peppers other spices; often served at Christmas and special occasions.
Ingredients:
4 lbs. Lamb cubed
2 tsp ground 5 Spices (Star Anise, Allspice, Nutmeg, clove, Fennel seed)
6 cloves garlic
3 medium onions diced
3 cinnamon sticks
1tbsp ground cinnamon
Bunch of thyme
2 tbsp brown sugar
10 whole cloves
10 whole Allspice.
3 x 2” peels of orange
11/2 cup cassareep
2-3 Wiri Wiri peppers
1 tbsp vegetable oil
Salt to taste
Water
White Bread (It could be braided to make Plait bread)
61/2 cup all purpose flour
½ Cup Sugar
½ Cup Room temperature Butter
21/2 Cup Water
2 tbsp. Active Yeast
½ tsp Salt
