This recipe is great for breakfast, lunch, or dinner! Easy to customize so everyone gets what they like, because you can use whatever veggies and seasonings you prefer.
1 tortilla
1/3 cup fat free mozzarella
2 eggs
Spinach
Tomatoes
Bell peppers
Oregano, garlic, salt, pepper
Preheat your oven to 375
Put parchment paper on the bottom of a round cake pan
Place tortilla in the pan
Crack eggs onto tortilla
Cut up and put veggies and spices on top
Bake at 375 for 10 min
Open and add cheese and bake for another 3-5 min
