BREAKFAST INGREDIENTS:
Olive Oil
1 bottle Just Egg (vegan egg)
1 pack vegan sausage (brand we’re using: Beyond Meat)
1/4 cup vegan Mexican cheese shreds (brand we’re using: So Delicious)
3 cloves minced garlic
1 cup chopped sweet onion
1 chopped bell pepper (any color)
3 cups cubed potatoes (skin on)
2 cups baby spinach
Spices: garlic powder, black pepper, onion powder, red pepper flakes, herbs de provence, pink salt, paprika, black salt (this kind tastes like eggs!)
Garnish: avocado slices, ripped basil (or cilantro or parsley), hot sauce, ketchup
Toast: sourdough bread, vegan butter, jelly (all fruit, no added sugar)
Potatoes:
1 - in a skillet add 3 TBS olive oil, potatoes, 1/2 of peppers, 2/3 of garlic, 1 TBS garlic powder, 1 tsp black pepper, 1 tsp pink salt, 2 tsp onion powder, red pepper flakes (to taste)
2 - mix to combine
3 - cover and cook on medium-high, stirring every 5 mins, until potatoes get soft and start to brown (20-30 mins)
4 - remove lid, add 1-2 tsp paprika and 1 tsp herbs de provence, mix to combine
5 - with lid off, cook til potatoes are browned & crispy
Vegan Eggs:
1 - in a skillet add 2-3 TBS olive oil, rest of peppers, onions & garlic, 2 tsp each: garlic powder, black pepper, onion powder, black salt, red pepper flakes (to taste)
2 - mix to combine, sauté til soft 3-5 mins
3 - add baby spinach and combine & cook til wilted
4 - add entire bottle of Just Egg & cook 5-8 mins
5 - sprinkle vegan cheese shreds over top, turn off heat & cover so shreds steam/melt
Vegan Sausage:
1 - Put straight from freezer into pan and fry til brown
Toast:
